  • 1 tablespoon olive oil
  • 2 medium carrots, diced

  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth
  • 15 oz can Great Northern beans, rinsed and drained
  • 15 oz can Kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Sauté carrots, onion, celery, and garlic in the same pot until softened.
  3. Stir in diced tomatoes and tomato sauce along with the cooked beef.
  4. Add chicken broth and both types of beans; let simmer for 10 minutes.
  5. Incorporate ditalini pasta with Italian seasoning, salt, and pepper; simmer for an additional 10 minutes until pasta is tender.
  6. Stir in fresh basil before serving hot.
