  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pure canned pumpkin
  • 1/4 cup canola oil
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans and line them with parchment paper.
  2. In a bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
  3. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt into the wet mixture. Stir until just combined.
