  • 1 1/2 cups cake flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a separate bowl, whisk together both flours, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter with granulated sugar until smooth. Add eggs and vanilla; mix well.
  5. Gradually add dry ingredients to wet mixture until combined.
  6. Shape dough into a rectangle, spread the cinnamon filling evenly over it, then roll tightly.
  7. Cut into cookies and bake for 9–11 minutes or until edges are golden.
  8. Allow to cool before frosting with cream cheese mixture.
