  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 8 oz egg noodles, cooked
  • 1/4 cup soy sauce (for teriyaki sauce)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated

Instructions

  1. Marinate the chicken by combining it with soy sauce and honey in a bowl; let sit for about 10 minutes.
  2. In a large skillet or wok over medium-high heat, drizzle oil and cook the marinated chicken for about 5–7 minutes until golden brown. Remove and set aside.
  3. Stir-fry the bell peppers, broccoli, and carrot in the same skillet for about 3–4 minutes until tender yet vibrant.
  4. Prepare the teriyaki sauce by whisking together soy sauce, brown sugar, rice vinegar, garlic, and ginger; pour into the skillet with veggies.
  5. Add back the cooked chicken and noodles to the skillet; toss to combine everything in the sauce and heat through for another 2–3 minutes.
