  • 1 lb. boneless skinless chicken breast (or thighs)
  • 6 strips turkey bacon (or substitute with extra chicken)
  • 1 small yellow onion, diced
  • ¾ cup carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 1 ½ lbs. Yukon Gold potatoes, cubed
  • 1 cup half-and-half
  • Assorted seasonings (salt, pepper, hot sauce, Worcestershire sauce)

Instructions

  1. In a large soup pot over low heat, cook turkey bacon until crispy; set aside and reserve drippings.
  2. Season the chicken with salt and pepper then sear in the same pot until golden brown. Remove and let rest before cutting into bite-sized pieces.
  3. Add reserved drippings back to the pot; sauté onions, carrots, and celery for about 5 minutes.
  4. Stir in garlic and seasonings; mix well.
  5. Sprinkle in flour while stirring for about 2 minutes until fragrant.
  6. Gradually add chicken broth and half-and-half while stirring until smooth.
  7. Add cubed potatoes; bring to boil then reduce heat to simmer for about 20 minutes or until tender.
  8. Stir in shredded cheese until melted; mix in half of the chopped turkey bacon.
  9. Serve warm garnished with green onions and remaining bacon bits.
