  • 1 tablespoon butter
  • 1 small yellow onion (diced)
  • 3 celery stalks (thinly sliced)
  • 2 carrots (thinly sliced)
  • 10 to 12 cups low sodium chicken broth
  • 2 pounds skinless, bone-in chicken breasts
  • 10 ounces egg noodles (or your choice of pasta)
  • Chopped fresh parsley (for garnish)

Instructions

  1. In a Dutch oven, heat olive oil and butter over medium heat. Add diced onion, celery, and carrots; cook for 5 minutes. Stir in minced garlic and cook until fragrant.
  2. Pour in chicken broth and add thyme sprigs and bay leaf. Bring to a simmer.
  3. Add chicken breasts along with salt and pepper; cover and simmer for 25-30 minutes until fully cooked.
  4. Remove chicken, shred, and return to the pot.
  5. Cook noodles according to package instructions; add them to the soup along with the shredded chicken.
  6. Simmer for another 2 minutes before serving.
