  • 2 slices sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Mash avocado with lemon juice, salt, and pepper in a small bowl until smooth.
  2. Spread mayonnaise on one side of each slice of bread (if using). On one slice, spread the avocado mixture evenly.
  3. Layer shredded chicken and cheese on top of the avocado spread. Place the second slice of bread on top with mayo side facing out.
  4. Heat butter in a skillet over medium heat. Grill the sandwich for 3–4 minutes per side, pressing gently with a spatula until golden brown and cheese is melted.
  5. Remove from heat, slice in half, and serve hot.
