Ingredients

Scale
  • 12 oz pasta (spaghetti, fettuccine, or penne)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil (for onions)
  • 1 tablespoon butter
  • 1/4 cup olive oil (for chili oil)
  • 1 tablespoon chili flakes
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Optional: Fresh parsley, grated cheese

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve about ½ cup of pasta water before draining.
  2. In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and salt; cook for about 25-30 minutes until caramelized, stirring occasionally.
  3. In a separate saucepan, combine olive oil, chili flakes, minced garlic, and salt over low heat until fragrant (about 2-3 minutes).
  4. Add the drained pasta to the skillet with caramelized onions. Pour in some chili oil and mix well; add reserved pasta water if necessary to reach desired consistency.
  5. Serve garnished with parsley and additional chili oil if desired.
