  • 3 large sweet potatoes
  • ½ cup cooked turkey bacon, crumbled
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • Salt and pepper to taste
  • Minced scallion for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prick each sweet potato several times with a fork. Lightly coat with canola oil and sprinkle with salt.
  3. Bake the sweet potatoes on a baking sheet for 60-90 minutes until fork-tender.
  4. Once baked, slice each potato in half lengthwise and scoop out the insides into a mixing bowl.
  5. Add the turkey bacon, butter, and cheese to the bowl; mix well.
  6. Fill each potato skin with the mixture, creating a well for an egg on top.
  7. Crack an egg into each filled potato skin; season with salt and pepper.
  8. Return to the oven and bake for another 15-20 minutes until the egg is set.
