  • 1 ½ cups chocolate cookie crumbs (such as Oreo, without filling)
  • ¼ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • Pinch of salt
  • 1 can (21 oz) cherry pie filling
  • Optional: dark chocolate shavings or curls for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Line a 9×9 inch baking pan with parchment paper.
  3. In a bowl, mix chocolate cookie crumbs, melted butter, and sugar until crumbly. Press into the bottom of the prepared pan.
  4. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, sour cream, and salt.
  5. Pour the cheesecake mixture over the crust and smooth the top with a spatula. Bake for 40–45 minutes until set but slightly wobbly in the center.
  6. Let cool completely before refrigerating for at least four hours or overnight. Top with cherry pie filling and garnish if desired.
