  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until combined. Gradually add the dry ingredients until just mixed.
  4. In another bowl, beat the cream cheese until smooth; then mix in granulated sugar, egg yolk, and vanilla.
  5. Fill muffin cups three-quarters full with batter and top each with cream cheese mixture. Use a toothpick to swirl it gently into the batter.
  6. Bake for 18 to 20 minutes or until a toothpick comes out clean.
