  • 2 carrots, quartered and sliced
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (15 oz) tomato sauce
  • 1 dried bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes (optional)
  • 4 cups low sodium vegetable broth
  • 1 cup water
  • 1 cup dry ditalini pasta

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Sauté 1 diced onion, 3 minced garlic cloves, and 2 quartered sliced carrots until soft (about 5–6 minutes).
  3. Stir in 1 can rinsed cannellini beans, 1 can tomato sauce, 1 bay leaf, 1 teaspoon dried basil, 1 teaspoon dried parsley, ½ teaspoon dried oregano, ¼ teaspoon black pepper, and optional red pepper flakes.
  4. Pour in 4 cups low-sodium vegetable broth and 1 cup water; bring to a boil.
  5. Add 1 cup dry ditalini pasta; reduce heat to simmer and cook until al dente (about 6–7 minutes). Remember to remove the bay leaf before serving.
