Ingredients

  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • Juice from 1 lemon (halved)
  • 1 tbsp honey
  • 20g fresh basil for garnish

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube potatoes; par-boil for 6-8 minutes. Drain and let steam dry.
  3. In a baking dish, mix potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes.
  4. Drizzle olive oil over the garlic head, wrap in foil, and place in the baking dish with the potatoes.
  5. Roast for about 30-40 minutes until golden brown.
  6. Remove garlic, add feta cheese to the center of the tray, squeeze half a lemon over it.
  7. Return to oven for another 15 minutes until feta is soft and slightly golden.
  8. Squeeze roasted garlic into a bowl and mash; mix with remaining lemon juice and fold into potatoes along with basil.
  9. Drizzle honey over everything and sprinkle red chili flakes before serving warm.
