  • 2 large apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 large eggs
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
  4. Gently fold dry ingredients into wet ingredients until just combined. Stir in diced apples carefully.
  5. Drop spoonfuls of batter onto the prepared baking sheet with space between each fritter.
  6. Bake for 15–18 minutes until golden brown.
  7. While baking, whisk powdered sugar with milk and vanilla for the glaze.
  8. Let fritters cool slightly before drizzling with glaze.
