  • 1 cup (226 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. 1. Preheat your oven to 325°F and line a 9 x 5 loaf pan with parchment paper.
  2. 2. In a stand mixer, cream together room temperature butter, granulated sugar, and light brown sugar until fluffy.
  3. 3. Add eggs one at a time, mixing well after each addition, then blend in vanilla extract.
  4. 4. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, ginger, and nutmeg.
  5. 5. Gradually add the dry mixture to the wet mixture while alternating with apple cider.
