  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (for syrup)
  • 1 tsp salt
  • 4 egg yolks
  • 600 ml milk (whole or plant-based)
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the apples by washing, peeling, coring, and slicing them thinly. Toss slices in a mixture of sugar and salt.
  2. In a saucepan, combine water and 150 g sugar over medium heat; simmer until dissolved to make the syrup. Let cool.
  3. In a bowl, whisk egg yolks with sugar until creamy. Add cornstarch and mix well.
  4. Heat milk until just below boiling point; gradually whisk into the egg mixture to prevent curdling. Return to low heat until thickened.
  5. Layer apple slices in a baking mold, drizzle with syrup, add custard, and repeat layers finishing with custard on top.
  6. Bake at 180°C (350°F) for about 80 minutes until golden brown.
