  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 cups peeled, diced apples
  • ½ cup brown sugar
  • ½ cup flour
  • 1 tsp cinnamon
  • ¼ cup cold butter, cubed
  • 1 apple, peeled and finely diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch baking pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter with sugar until fluffy. Add eggs one at a time along with vanilla and sour cream.
  4. Gradually combine dry ingredients with wet ingredients and fold in diced apples.
  5. Pour batter into the pan and sprinkle crumb topping made from brown sugar, flour, cinnamon, and cold butter over it.
  6. Bake for 40–45 minutes until a toothpick comes out clean.
  7. For the drizzle, cook diced apple with butter, brown sugar, cinnamon, and water until soft; drizzle over cooled cake before serving.
