  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 bricks cream cheese, softened
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices (to taste)

Instructions

  1. Boil fresh apple cider with mulling spices in a pot until reduced to about 1/3 cup; let cool.
  2. Preheat oven to 350°F. In a food processor, combine crushed cookies, melted butter, salt, and powdered sugar; pulse until crumbs form.
  3. Press crumb mixture into an 8” springform pan and bake for 10 minutes; cool.
  4. Lower oven temperature to 325°F. Beat cream cheese and brown sugar in a stand mixer until smooth; add sour cream, vanilla, salt, reduced cider, cinnamon, and mix until creamy.
  5. Add eggs and flour; mix gently until just combined. Pour filling into the crust.
  6. Bake in a water bath for about 90 minutes until edges are set but center remains wobbly.
  7. Cool gradually in the oven, then chill for at least 8 hours before serving.
